Ingredients:

Instructions:
1 Prepare the corn:
- Cut kernels from corn cobs
- Place in large bowl

- Let cool completely

- Combine all dressing ingredients
- Pour over vegetables
- Toss gently to combine
3. Season and chill:
- Add salt and pepper

- Arrange lettuce leaves on plate
- Spoon salsa over lettuce
- Garnish with extra cilantro
