Chili Crisp Peanut Noodles with Crispy Halloumi
Peanut noodles are a delightful dish packed with flavor, often inspired by Thai cuisine. This version incorporates crispy halloumi, a Greek grilling cheese that adds a wonderful texture and unique twist to the traditional peanut noodle recipe. The creamy peanut sauce, combined with fresh veggies, crispy halloumi, and spicy chili oil, makes this a satisfying yet light meal perfect for warmer days.

Ingredients:
8 oz rice noodles or long-cut pasta
½ cup creamy peanut butter
⅓ cup tamari or soy sauce
2 tbsp honey
¼ cup Thai red curry paste
1 tbsp fresh ginger, grated
2 carrots, shredded
2 bell peppers, thinly sliced
1 tbsp + ¼ cup sesame oil
8 oz halloumi cheese, cubed and patted dry
6 cloves garlic, chopped
½ cup fresh basil, chopped
½ cup fresh cilantro, chopped
2 green onions, thinly sliced
3 tbsp toasted sesame seeds
3 tbsp chopped peanuts
2 tbsp lime juice
Directions:
Bring a large pot of salted water to a boil and cook the noodles according to package directions. Drain and add to a large bowl with shredded carrots and sliced peppers.
In a food processor, combine peanut butter, soy sauce, honey, curry paste, ginger, and ⅓ cup of water. Pulse until smooth and pour over the warm noodles. Toss well.
Heat 1 tbsp sesame oil in a skillet over medium heat, add halloumi, and cook until golden, about 5 minutes. Remove and set aside.
Add ¼ cup sesame oil, garlic, and a pinch of chili flakes to the skillet. Cook until the garlic crisps, about 5 minutes. Toss the halloumi with half of the garlic oil, cilantro, basil, peanuts, sesame seeds, and lime juice.
Serve the noodles topped with halloumi, herbs, and extra chili garlic oil.
