2½ cups (packed) zucchini, shredded (about 2 medium zucchinis)
1½ cups white cheddar cheese, shredded
½ cup Panko breadcrumbs
2 large eggs
2 teaspoons garlic powder
½ teaspoon sea salt

Instructions:
Preheat the oven:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
Prepare the zucchini:
Shred the zucchini using a grater. Place it in a clean kitchen towel or cheesecloth, and squeeze out as much moisture as possible.
Combine the ingredients:
In a large mixing bowl, combine the shredded zucchini, white cheddar cheese, Panko breadcrumbs, eggs, garlic powder, sea salt, and black pepper. Mix well until the ingredients are fully incorporated.
Form the bites:
Scoop about 1 tablespoon of the mixture and roll it into a ball. Flatten slightly to form a bite-sized patty. Place each patty onto the prepared baking sheet, leaving some space between them.
Bake:
Bake the zucchini bites for 20-25 minutes, or until golden brown and slightly crispy around the edges. Flip them halfway through the cooking time for even browning.
Serve: Allow the bites to cool slightly before serving. They pair well with marinara sauce, ranch dressing, or your favorite dipping sauce.

- Use medium-sized zucchinis for the best results.
- Don’t overcrowd the baking sheet to ensure even cooking.
