Ingredients

For the Onions:

3 large yellow onions, thinly sliced

2 tbsp olive oil

1 tsp kosher salt

½ tsp sugar (helps caramelization)

1 tsp Worcestershire sauce (optional, for umami)

¼ cup water or broth (for deglazing)

For the Dip:

1 cup sour cream (or Greek yogurt)

½ cup mayonnaise

4 oz cream cheese, softened

1 tsp garlic powder

½ tsp black pepper

1 tbsp chopped chives or green onions (optional)

Instructions

1. Caramelize the Onions (Instant Pot)

Set Instant Pot to Sauté (Normal). Add butter and oil.

Once melted, add sliced onions, salt, and sugar. Cook, stirring occasionally, for 10 minutes until soft and golden edges appear.

Add Worcestershire and water, scraping up brown bits.

Lock lid, set to Manual/Pressure Cook on High for 5 minutes. Quick release.

2. Reduce (If Needed)

If onions are too wet, return to Sauté for 3–5 minutes to reduce liquid.

3. Blend the Dip

In a mixing bowl, stir together sour cream, mayo, softened cream cheese, garlic powder, and pepper.

Fold in caramelized onions (reserve a spoonful for garnish if desired).

Chill for 30 minutes or serve warm.

To Serve

Garnish with chives or green onions.
