Ingredients

3 ripe but firm peaches, halved and pitted

1 tbsp olive oil

4 cups arugula (or mixed greens)

1 large ball of burrata cheese (or 2 smaller ones)

1/4 cup fresh basil leaves

1/4 cup toasted walnuts or pistachios

Salt and pepper to taste

Optional additions:

6–8 cherry tomatoes, halved

Instructions

1. Grill the peaches
