Ingredients

For the bowl base:
1 cup cooked rice, quinoa, or couscous
1 cup baby spinach or arugula
1/2 cup cucumber, diced
1/2 cup cherry tomatoes, halved
1/4 cup red onion, thinly sliced
Optional: 1/4 cup crumbled feta, pickled onions, or olives
For the tzatziki:
1/2 cup Greek yogurt
1/4 cup grated cucumber, squeezed dry
1 tsp lemon juice
1 clove garlic, minced
1 tbsp fresh dill or mint, chopped

Instructions
1. Marinate and cook the chicken
Mix oil, lemon juice, paprika, cumin, chili flakes, garlic powder, salt & pepper.
Rub all over the chicken. Let marinate for 10–15 min (or longer if you have time).
Grill or pan-sear over medium-high heat for 6–7 minutes per side, until cooked through.
Rest 3 minutes, then slice.
2. Make the tzatziki
Mix yogurt, cucumber, lemon, garlic, dill, salt, and pepper.
Chill while everything else is cooking.
3. Build your bowl
In a bowl, add rice or grains, then top with greens, tomatoes, cucumber, onion, and chicken.
