Creamy Mushroom Pasta
A rich and velvety pasta dish featuring sauteed mushrooms in a garlic herb cream sauce. Perfect for cozy dinners and ready in under 30 minutes.

Ingredients:
200g (7 oz) pasta (fettuccine, spaghetti, or penne)
1 tbsp olive oil
250g (8 oz) mushrooms, sliced (cremini, button, or mixed)
2 garlic cloves, minced
½ tsp dried thyme or Italian seasoning
½ cup heavy cream (or half & half)
¼ cup grated Parmesan cheese
Salt & black pepper to taste
1 tbsp chopped parsley
Splash of pasta water (as needed)
Instructions:
Cook Pasta:
Boil pasta in salted water until al dente. Reserve ½ cup of pasta water, then drain.
Saute Mushrooms:
Heat olive oil in a skillet over medium heat. Add mushrooms and cook until golden, about 6–8 minutes. Stir in garlic and thyme, cook 1 minute.
Make Cream Sauce:
Lower heat. Stir in cream and Parmesan. Season with salt and pepper. Simmer gently 3–4 minutes until thickened.
Toss Pasta:
Add cooked pasta to the skillet. Toss to coat. Add pasta water a little at a time for desired creaminess.
Serve:
Garnish with chopped parsley and more Parmesan if desired. Serve hot!
Tips:
Add spinach or peas for extra veggies.
Swap cream for Greek yogurt (off heat) for a lighter version.
Use gluten-free pasta if needed.
