Ingredients:

5 large eggs

1/4 cup milk (or unsweetened almond milk)

Salt & pepper to taste

1/4 tsp garlic powder

Fillings:

1/4 cup feta cheese or shredded cheddar

1/4 cup baby spinach, chopped

1/4 cup red bell pepper, diced

1/4 cup cooked mushrooms or onions, chopped

2 tbsp sun-dried tomatoes, finely chopped

1 tbsp fresh herbs (parsley, chives, or basil)

Instructions:

1. Preheat & Prep Pan:

Preheat oven to 375°F (190°C). Grease a 12-cup mini muffin pan well with olive oil spray or butter.

2. Whisk Egg Mixture:

In a bowl, whisk eggs, milk, garlic powder (if using), salt, and pepper until smooth and fluffy.

3. Add Fillings:

Evenly distribute your choice of veggies and cheese into the muffin cups (don’t overfill). Add herbs last.

4. Pour Egg Mixture:

Carefully pour the egg mixture over the fillings, filling each cup about 90% full.

5. Bake:

Bake for 18–20 minutes, or until puffed and lightly golden. They’ll settle slightly as they cool.
