Ingredients

1 small eggplant, diced

½ tsp paprika

Salt & black pepper, to taste

Couscous

1 cup couscous

1 cup vegetable broth (or water)

1 tbsp olive oil

1 tbsp lemon juice

2 tbsp fresh parsley, chopped

Sauce (choose one)

Option 1: Yogurt-Tahini Sauce

½ cup plain Greek yogurt (or dairy-free yogurt)

1 tbsp tahini

1 tbsp lemon juice

1 clove garlic, minced

Salt & pepper, to taste

Option 2: Classic Hummus

For Assembling

4 large wraps or flatbreads

Optional extras: feta cheese, olives, arugula/spinach, fresh herbs

Instructions

Roast the veggies

Preheat oven to 400°F (200°C).

Toss zucchini, eggplant, bell pepper, and onion with olive oil, oregano, paprika, salt, and pepper.

Spread on a baking sheet and roast for 20–25 minutes until tender and caramelized.

Cook couscous

Bring vegetable broth to a boil. Stir in couscous, cover, and remove from heat.

After 5 minutes, fluff with a fork. Add olive oil, lemon juice, and parsley.

Make sauce

Whisk yogurt, tahini, lemon juice, garlic, salt, and pepper (or use hummus).

Assemble wraps

Warm wraps slightly for easier rolling.

Spread a layer of sauce or hummus.

Add couscous, roasted veggies, and any extras (feta, greens, olives).

Roll tightly into wraps or fold into flatbreads.

Serve

Cut in half and enjoy warm or at room temperature.
