Greek Chicken Gyro with Cucumber Tzatziki
Ingredients – Chicken Marinade:
1.5 lbs (700g) boneless, skinless chicken thighs or breasts
3 tbsp olive oil
Juice of 1 lemon
4 garlic cloves, minced
1 tbsp red wine vinegar
1 tbsp plain Greek yogurt (optional, for tenderizing)
1 tbsp dried oregano
1 tsp paprika
Salt and pepper to taste
Cucumber Tzatziki Sauce:
1 cup Greek yogurt (preferably full-fat)
1/2 large cucumber, grated and squeezed dry
1–2 garlic cloves, minced
1 tbsp olive oil
1 tsp lemon juice or white vinegar
1 tbsp chopped fresh dill (or mint, optional)
Salt to tas To Serve:
Warm pita bread or flatbreads
Sliced red onion
Sliced tomatoes
Shredded lettuce or arugula
Crumbled feta (optional)
Instructions:
1. Marinate the Chicken:
In a bowl, combine olive oil, lemon juice, garlic, vinegar, yogurt (if using), oregano, paprika, salt, and pepper.
Add chicken, toss to coat, and marinate for at least 1 hour (or overnight in the fridge for best flavor).
2. Make the Tzatziki:
Grate cucumber and squeeze out excess water using a clean towel or cheesecloth
Mix grated cucumber with Greek yogurt, garlic, olive oil, lemon juice, dill, and salt.
Chill for 30 minutes to let the flavors develop
3. Cook the Chicken:
Grill, pan-fry, or bake the chicken until fully cooked and nicely charred. Let rest, then slice into strips.
4. Assemble the Gyros:
Warm pita or flatbread.
Spread a generous layer of tzatziki.
Add chicken slices, onions, tomatoes, lettuce, and a sprinkle of feta.
Fold and serve!
