Ingredients

For the Sweet Potatoes:

3 medium sweet potatoes, peeled & diced into cubes

1 tbsp olive oil

½ tsp smoked paprika

½ tsp garlic powder

Salt & pepper, to taste

For the Chicken:

1 ½ lbs boneless, skinless chicken breasts or thighs

½ cup BBQ sauce

1 tbsp olive oil

Salt & pepper, to taste

For the Bowl Toppings:

1 cup black beans

1 cup corn kernels (grilled, roasted, or thawed if frozen)

1 avocado, sliced or diced

½ small red onion, thinly sliced

Fresh cilantro, chopped

Extra BBQ sauce, for drizzling

Instructions

1. Roast the Sweet Potatoes

Preheat oven to 425°F (220°C).

Toss sweet potato cubes with olive oil, smoked paprika, garlic powder, salt, and pepper.

Spread on a sheet pan and roast 25–30 minutes, flipping halfway, until tender and caramelized.

2. Cook the Chicken

Season chicken lightly with salt & pepper.

Heat olive oil in a skillet over medium-high. Sear chicken 5–6 minutes per side until golden and cooked through (165°F/74°C inside).

Remove, rest 5 minutes, then shred or slice. Toss with ½ cup BBQ sauce.

3. Assemble the Bowls

Start with a layer of roasted sweet potatoes.

Add BBQ chicken, black beans, corn, avocado, and onion.

Drizzle with more BBQ sauce and sprinkle with fresh cilantro.

Serving Suggestions

Add a dollop of Greek yogurt or sour cream for creaminess.

Serve with a side of mixed greens or coleslaw.

Swap beans for quinoa or brown rice for more grains.
