8 large eggs

1 cup cherry tomatoes, halved (or 1 large tomato, diced)
2 cups fresh arugula
3 oz (85 g) goat cheese, crumbled
Salt & black pepper, to taste

Instructions
Step 1: Prep the Egg Base
1. In a bowl, whisk eggs, milk, salt, and pepper until smooth. Set aside.
Step 2: Cook Vegetables
1. Heat olive oil in an oven-safe skillet (cast iron or nonstick) over medium heat.
2. Add shallot and cook 2–3 minutes until soft.
3. Stir in cherry tomatoes and cook 2 minutes until just beginning to soften.
4. Add arugula and cook 1 minute until wilted.
Step 3: Assemble & Cook
1. Pour egg mixture evenly over the vegetables.
2. Sprinkle goat cheese crumbles on top.
3. Cook on the stovetop 2–3 minutes until edges set.
Step 4: Bake
1. Transfer skillet to preheated oven at 180°C (350°F).
2. Bake 12–15 minutes, until the frittata is puffed and set in the center.
Step 5: Serve
1. Garnish with fresh basil or parsley.
2. Slice into wedges and serve warm or at room temperature.
