Ingredients

2 chicken breasts (or 4 thighs), cut into bite-sized pieces
2 cups mushrooms (button or cremini), sliced
3 garlic cloves, minced
2 tbsp olive oil
1 tsp dried thyme
½ tsp paprika

2 tbsp fresh parsley, chopped
For the Crispy Potatoes
3 medium potatoes, peeled and cut into cubes
2 tbsp olive oil
½ tsp garlic powder
½ tsp paprika
Salt & pepper, to taste
For the Rice
1 cup basmati or jasmine rice
2 cups chicken or vegetable broth
Pinch of salt
Instructions
1. Cook the rice:
Rinse rice until water runs clear.
In a pot, combine rice, broth, and a pinch of salt. Bring to a boil, then cover and simmer 15 minutes. Remove from heat and let rest covered.
2. Roast crispy potatoes:
Preheat oven to 200°C (400°F). Toss potato cubes with olive oil, garlic powder, paprika, salt, and pepper.
Spread on a baking sheet and roast 20–25 minutes, flipping halfway, until golden and crispy.
3. Cook chicken & mushrooms:
Heat olive oil/butter in a skillet. Add chicken, season with thyme, paprika, salt, and pepper. Cook until golden and cooked through (6–8 minutes).
Add mushrooms and garlic, cook another 5–6 minutes until mushrooms are tender and chicken is coated in garlic flavor. Stir in fresh parsley.
4. Assemble bowls:
Divide rice into bowls. Top with garlic mushroom chicken, crispy potatoes, and garnish with extra parsley.
