4 boneless, skinless chicken breasts

4 tbsp basil pesto

1 cup fresh mozzarella, sliced

1 cup cherry tomatoes, halved

2 tbsp olive oil

1 tsp garlic powder

1 tsp dried oregano

Instructions

Prepare chicken:

Preheat oven to 400°F (200°C).

Place chicken breasts on a cutting board. Using a sharp knife, carefully cut a pocket lengthwise into each breast (don’t cut all the way through).

Stuff chicken:

Spread 1 tbsp pesto inside each pocket.

Layer with mozzarella slices and tomato halves.
