For the Herb Salmon
2 salmon fillets
1 tbsp olive oil
1 tsp garlic powder or 2 garlic cloves, minced
½ tsp dried oregano
½ tsp dried basil
½ tsp paprika
Salt & black pepper
1 tbsp lemon juice
Lemon slices, for topping
For the Garlic Potatoes
2 medium potatoes, cubed
1 tbsp olive oil
1 tsp minced garlic
½ tsp paprika
½ tsp dried rosemary or oregano

For the Roasted Asparagus
1 bunch asparagus, trimmed
1 tsp olive oil
Salt & pepper

Instructions
1. Prepare the Garlic Potatoes
Preheat oven to 220°C (425°F).
Toss potatoes with olive oil, minced garlic, paprika, rosemary, salt & pepper.
Spread on a baking tray and bake 20–25 minutes, flipping halfway, until crispy and golden.
2. Prepare & Bake the Herb Salmon
Place salmon fillets on a separate tray lined with foil or baking paper.
Mix olive oil, garlic, oregano, basil, paprika, lemon juice, salt, and pepper.
Brush the mixture generously over the salmon.
Top with lemon slices.
Bake at 200°C (400°F) for 12–15 minutes, or until flaky.
3. Roast the Asparagus
Spread asparagus on the same tray as salmon (if there’s space) or a separate one.
Drizzle with olive oil, salt & pepper.
Roast for 10–12 minutes until bright green and slightly crispy.
Add a squeeze of lemon before serving.
4. Assemble the Plate
Add a portion of crispy garlic potatoes.
Place a beautifully baked herb salmon fillet.
Add roasted asparagus on the side.
Optional: garnish with fresh parsley, extra lemon, or a drizzle of olive oil.
