Mediterranean Lemon Coconut Nut Balls

Soft, chewy, naturally sweet energy balls made with shredded coconut, almonds/cashews, lemon zest, lemon juice, honey, and olive oil. These Mediterranean-inspired bites are refreshing, nutritious, and perfect for a quick healthy snack.

Ingredients 

Dry Ingredients

1 cup shredded coconut (unsweetened)

½ cup nuts (almonds or cashews; lightly crushed or powdered)

2 tbsp oat flour OR almond flour (binding)

Wet Ingredients

2 tbsp honey or maple syrup

1 tbsp olive oil OR melted coconut oil

1 tbsp fresh lemon juice

1–1½ tsp lemon zest (adds fragrance)

Optional Add-ins (Mediterranean friendly)

1 tbsp chia seeds

1 tbsp sesame seeds

1–2 tbsp crushed pistachios

A pinch of sea salt

‍ Instructions

1. Mix Dry Ingredients

In a bowl, combine:

Shredded coconut

Crushed almonds/cashews

Oat/almond flour

Optional seeds

Mix well.

2. Add Wet Ingredients

Add:

Honey

Lemon juice

Lemon zest

Olive oil or melted coconut oil

Mix until the dough becomes sticky and moldable.

If too dry → add a teaspoon more honey or lemon juice.

If too wet → add a little coconut.

3. Shape the Balls

Take small portions and roll them into bite-sized balls.

4. Coat (Optional)

Roll each ball in extra shredded coconut or crushed pistachios.

5. Chill

Refrigerate 20–30 minutes to firm up.

Ready to eat!

Serving Suggestions

Keep in an airtight box for 1 week in the fridge.

Notes

Use olive oil for a Mediterranean flavor.

Honey binds the mixture better than maple.
