Sweet & Savory Chicken Stir-Fry Bowl with Rice & Broccoli

Ingredients
For the Chicken Stir-Fry:
2 chicken breasts, diced
1 tbsp oil (vegetable or sesame)
1 red bell pepper, thinly sliced
1 garlic clove, minced
Salt & pepper
Fresh chopped parsley or cilantro for garnish
For the Sauce:
2 tbsp soy sauce
1 tbsp honey or brown sugar
1 tbsp rice vinegar or lemon juice
1 tsp cornstarch + 2 tbsp water (mixed)
For the Rice:
1 cup jasmine or long grain rice
2 cups water
1/2 tsp salt
Optional: chopped herbs for garnish
For the Broccoli:
1 cup broccoli florets
Salted water for steaming
Instructions
Cook the Rice: Bring rice, water, and salt to a boil. Cover, reduce heat, and simmer for 15 minutes. Let sit, fluff, and set aside.
Steam the Broccoli: Boil or steam broccoli for 2–3 minutes until tender but bright green. Drain and rinse with cold water.
Make the Stir-Fry: Heat oil in a skillet or wok. Add chicken and sear for 5–6 minutes until browned. Add garlic and bell pepper; cook another 3–4 minutes.
Add the Sauce: Mix soy sauce, honey, vinegar, and cornstarch slurry. Pour over chicken and simmer for 2–3 minutes until thickened and glossy. Adjust seasoning.
Assemble the Bowl: Plate rice on one side, chicken stir-fry on the other, and broccoli to the side. Garnish with herbs and serve warm.
Tips & Variations:
Add chili flakes or sriracha for heat.
Use tamari or coconut aminos for gluten-free.
Add sliced carrots or snap peas for extra crunch.
