Chickpea, Avocado & Tomato Crunch Salad with Golden Dressing

Ingredients
For the Salad
2 cups lettuce (or any leafy greens)
1 cup canned chickpeas, drained & rinsed
1 avocado, sliced
1 cup cherry tomatoes, halved
Salt & black pepper to taste
For the Golden Dressing
1 tbsp olive oil
1 tsp Dijon mustard
1–2 tsp lemon juice
1 tsp honey or maple syrup
1/4 tsp turmeric (gives that golden color)
Salt & pepper to taste
Directions
1. Assemble the Salad
Lay the lettuce on the bottom of the plate.
Add the sliced avocado and tomatoes.
Top generously with chickpeas.
Season with salt and freshly cracked black pepper.
2. Make the Golden Dressing
Whisk olive oil, Dijon, lemon juice, honey, turmeric, salt, and pepper.
Taste and adjust—more lemon for tang, more honey for sweetness
3. Finish
Dizzle the dressing over the salad right before eating. Enjoy fresh!
