French-Inspired Garlic Green Bean Almondine with Toasted Almonds
A light and flavorful French classic: green beans sautéed in butter and olive oil, tossed with golden toasted almonds, garlic, and a hint of lemon. It’s crisp, nutty, and perfect with chicken, fish, or holiday meals.

Ingredients
350–400g fresh green beans, trimmed
1 tbsp olive oil
3 garlic cloves, thinly sliced
¼ cup sliced almonds
Salt & black pepper to taste
1 tbsp lemon juice
½ tsp lemon zest
Optional garnish: chopped parsley
Instructions
1. Blanch the Green Beans
Bring a pot of salted water to a boil.
Add green beans and cook 2–3 minutes until bright green and slightly tender.
Immediately transfer to an ice-cold water bowl to stop the cooking.
Drain and dry well.
2. Toast the Almonds
Heat a dry pan on medium.
Add sliced almonds and toast 1–2 minutes, stirring often until lightly golden.
Remove and set aside.
3. Saute the Garlic & Beans
In the same pan, heat olive oil.
Add sliced garlic and saute 20–30 seconds until fragrant (do NOT burn).
Add blanched green beans.
Toss for 2–3 minutes on medium heat until warm and glossy.
Season with salt, black pepper, lemon juice, and lemon zest.
4. Finish with Almonds
Sprinkle the toasted almonds over the green beans.
Toss gently.
Garnish with parsley if you like.
Notes & Tips
Add ½ tsp Dijon mustard to the lemon juice for a French bistro twist.
Use haricots verts (thin French beans) for an even more delicate version.
For a richer flavor, add an extra teaspoon of butter at the end.
