Greek-Style Chicken Bowl with Brown Rice, Tzatziki & Cucumber-Tomato Salad

Ingredients:

For the Chicken:

400 g (14 oz) chicken breast, cubed

2 tbsp olive oil

1 tsp paprika

1 tsp dried oregano

½ tsp garlic powder

Salt & black pepper

 

Optional: a splash of lemon juice

 

For the Brown Rice:

 

150 g (¾ cup) brown rice

 

Salt

 

1 tsp chopped parsley (for garnish)

 

For the Cucumber-Tomato Salad:

 

½ cucumber, diced

 

100 g (1 cup) cherry tomatoes, halved

 

½ red onion, finely chopped

 

1 tbsp olive oil

 

1 tsp lemon juice or white wine vinegar

 

Salt & pepper

 

Fresh parsley, chopped

 

For the Tzatziki:

 

150 g (⅔ cup) Greek yogurt

 

¼ cucumber, grated and squeezed dry

 

1 garlic clove, minced

 

1 tsp lemon juice

 

1 tbsp olive oil

 

1 tsp fresh or dried dill

 

Salt & pepper

 

Instructions:

 

Cook the Rice:

 

Boil brown rice in salted water according to package instructions (about 25–30 min).

 

Prepare & Cook Chicken:

 

Marinate chicken in olive oil and spices. Cook in a hot skillet over medium heat until golden brown and fully cooked (about 8–10 min).

 

Make the Salad:

 

Combine cucumber, tomatoes, and red onion in a bowl. Toss with olive oil, lemon juice, salt, pepper, and chopped parsley.

 

Prepare Tzatziki:

 

Mix grated cucumber with yogurt, garlic, lemon juice, olive oil, dill, salt, and pepper. Stir well and chill if possible.

 

Assemble the Bowl:

 

Arrange rice, chicken, salad, and a dollop of tzatziki in a bowl. Garnish with fresh parsley.

 

Tip: This bowl is great for meal prep or a light dinner. You can make it vegetarian by swapping the chicken for grilled halloumi or tofu.
