Ultimate Teriyaki Chicken Rice Bowl with Veggie Stir-Fry

Ingredients

For the Chicken

2 chicken breasts, sliced into strips

2 tbsp soy sauce

1 tbsp honey

1 tbsp rice vinegar

1 tsp sesame oil

1 garlic clove, minced

1 tsp fresh ginger, grated

1 tsp cornstarch (optional, for thickening)

1 tsp toasted sesame seeds

1 tbsp vegetable oil

For the Stir-Fried Veggies

1 cup broccoli florets

½ red bell pepper, thinly sliced

¼ cup sweet corn kernels

¼ cup chopped green onion (plus more for garnish)

¼ cup sliced green beans (optional)

1 tbsp soy sauce

1 tsp sesame oil

1 sp toasted sesame seeds

For the Base

1 cup jasmine or basmati rice

2 cups water

Pinch of salt

Instructions

Cook the rice: Rinse 1 cup of rice under cold water. Add it to a pot with 2 cups of water and a pinch of salt. Bring to a boil, then cover and reduce heat to low. Simmer for 15 minutes or until fluffy. Remove from heat and let sit, covered.

Marinate the chicken: In a bowl, mix soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger. Add sliced chicken and let it marinate for at least 10 minutes.

 

Cook the chicken: Heat vegetable oil in a skillet over medium-high heat. Add the marinated chicken (reserve the marinade) and cook for 5–6 minutes until golden and cooked through. Add the reserved marinade + cornstarch slurry (if using), and simmer for 1–2 minutes until thickened and glossy. Sprinkle with sesame seeds.

 

Stir-fry the veggies: In another pan, heat sesame oil. Add broccoli, bell pepper, corn, green beans, and green onions. Stir-fry on medium-high heat for 5–6 minutes until crisp-tender. Add soy sauce and toss well. Sprinkle sesame seeds over the top.

 

Assemble the bowl: Scoop rice into bowls, top with the glazed chicken and vibrant stir-fried veggies. Garnish with extra green onions and sesame seeds.

 

💡 Notes & Tips

 

You can swap chicken with tofu or shrimp for variation.

 

Add a drizzle of sriracha or chili oil for a spicy kick.

 

Frozen stir-fry veggie mixes can be used for convenience.
