Ingredients
Smoky BBQ Tofu
250 g firm tofu, pressed and cubed
1 tbsp olive oil
2 tbsp BBQ sauce
½ tsp smoked paprika
½ tsp garlic powder
Salt & black pepper
Bowl Base
1 cup cooked rice (white or brown)
Veggies & Beans
½ cup black beans or kidney beans (cooked)
½ cup sweet corn
½ red bell pepper, diced
½ avocado, sliced
¼ red onion, thinly sliced
Fresh Toppings
Fresh coriander or parsley

Instructions
Bake the Tofu
Preheat oven to 200°C (400°F)
Toss tofu with olive oil, smoked paprika, garlic powder, salt & pepper
Bake 20 minutes, flipping halfway
Remove and toss with BBQ sauce
Return to oven for 5–10 minutes until sticky and slightly crispy
Warm the Beans & Corn
Lightly heat beans and corn in a pan or microwave
Season with a pinch of salt
Assemble Bowl
Base: rice
Add BBQ tofu, beans, corn, bell pepper, avocado, onion
Garnish with herbs and squeeze of lime
