Ingredients

Vegan Halloumi

400 g firm or extra-firm tofu, pressed & sliced

2 tbsp olive oil

1 tbsp lemon juice

1 tbsp nutritional yeast

½ tsp garlic powder

½ tsp dried oregano

Salt & black pepper

Salad

2 cups arugula or mixed greens

1 cup cherry tomatoes, halved

1 cucumber, sliced

¼ red onion, thinly sliced

¼ cup olives (Kalamata or green)

Lemon Dressing

2 tbsp extra-virgin olive oil

1 tbsp lemon juice

½ tsp Dijon mustard

Salt & pepper

Garnish

Fresh parsley or mint

Instructions

1️⃣ Prepare Vegan Halloumi

Mix olive oil, lemon juice, nutritional yeast, garlic powder, oregano, salt & pepper

Brush mixture onto tofu slices

Heat a grill pan or skillet

Grill 3–4 minutes per side until golden and crisp

2️⃣ Make Dressing

Whisk olive oil, lemon juice, Dijon, salt & pepper

3️⃣ Assemble Salad

Arrange greens, tomatoes, cucumber, onion, and olives in a bowl

Add warm grilled halloumi slices

4️⃣ Finish

Drizzle dressing

Sprinkle fresh herbs

Serve immediately
