Savory Spinach & Feta Phyllo Triangles

Crispy, golden Mediterranean pastries perfect for snacks, appetizers, or mezze platters

Introduction

Savory Spinach & Feta Phyllo Triangles are a classic Mediterranean and Greek-inspired pastry (often called Spanakopita Triangles). Delicate layers of flaky phyllo dough wrap a flavorful filling of spinach, feta cheese, herbs, and garlic. Baked until golden and crisp, these triangles are light yet satisfying—ideal for parties, tea time, or as a side dish.

Preparation Time

Prep: 20 minutes

Assembly: 15 minutes

Baking: 20–25 minutes

Total: ~1 hour

Ingredients (Makes about 18–20 triangles)

Filling

2 cups fresh spinach, finely chopped (or 1 cup frozen spinach, thawed & squeezed dry)

1 cup feta cheese, crumbled

2 tbsp cream cheese or ricotta (optional, for creaminess)

1 small onion, finely chopped

2 cloves garlic, minced

2 tbsp olive oil

1 egg (optional, for binding)

½ tsp salt (adjust to taste)

½ tsp black pepper

½ tsp dried oregano or dill

¼ tsp nutmeg (optional but traditional)

Pastry

10–12 sheets phyllo dough, thawed

⅓ cup melted butter or olive oil (for brushing)

Step-by-Step Instructions

Step 1: Prepare the Filling

Heat olive oil in a pan over medium heat.
Sauté onion until soft and translucent (3–4 minutes).
Add garlic and spinach; cook until wilted and moisture evaporates.
Remove from heat and let cool slightly.

In a bowl, combine spinach mixture, feta, cream cheese (if using), egg, salt, pepper, oregano/dill, and nutmeg. Mix well.

Step 2: Prepare Phyllo Sheets

Preheat oven to 180°C (350°F).
Line a baking tray with parchment paper.

Lay one sheet of phyllo on a clean surface and brush lightly with melted butter.
Place another sheet on top and brush again.
Cut lengthwise into 3–4 strips.

Step 3: Fill & Fold Triangles

Place 1 tablespoon filling at one end of each strip.
Fold diagonally to form a triangle, continuing until fully enclosed (like folding a flag).
Brush the outside lightly with butter.

Step 4: Bake

Place triangles seam-side down on the tray.
Bake for 20–25 minutes, or until golden brown and crisp.
