Roasted crispy cauliflower tossed in sticky BBQ glaze, tucked into warm tortillas with crunchy slaw and creamy vegan sauce. Perfect street-style vegan tacos.

Ingredients

BBQ Cauliflower

1 medium cauliflower, cut into florets

2 tbsp olive oil

½ tsp smoked paprika

½ tsp garlic powder

Salt & black pepper

⅓ cup vegan BBQ sauce

Creamy Slaw

1½ cups shredded cabbage

½ carrot, grated

2 tbsp vegan mayo or cashew cream

1 tbsp lemon juice

Salt to taste

Tacos

6 small corn or flour tortillas

Fresh cilantro

Red onion slices

Avocado slices

Instructions

1️⃣ Roast Cauliflower

Preheat oven to 200°C (400°F)

Toss cauliflower with olive oil, paprika, garlic powder, salt & pepper

Roast 20 minutes, flipping halfway

2️⃣ Glaze

Toss hot cauliflower with BBQ sauce

Return to oven 5–7 minutes until sticky and caramelized

3️⃣Make Slaw

Mix cabbage, carrot, mayo, lemon juice, and salt

4️⃣ Assemble Tacos

Warm tortillas

Add BBQ cauliflower

Top with slaw, onion, cilantro, and avocado
