Ingredients

Lemon Herb Chicken

2 chicken breasts, sliced or cubed

1½ tbsp olive oil

1 tbsp lemon juice

Zest of ½ lemon

1 garlic clove, grated

½ tsp paprika

½ tsp dried oregano

Salt & black pepper

Lentil Base

1½ cups cooked green or brown lentils

1 tbsp olive oil

1 tbsp lemon juice

¼ tsp cumin

Salt to taste

Fresh Veggies

½ cup cucumber, diced

½ cup cherry tomatoes, halved

¼ cup red onion, thinly sliced

Light Drizzle

¼ cup Greek yogurt

1 tbsp tahini

1 tbsp lemon juice

Salt

Water to thin

Optional Toppings

Fresh parsley or mint

Olives

Avocado slices

Chili flakes

Instructions

1️⃣ Cook Chicken

Heat a pan over medium heat with olive oil

Add chicken, garlic, paprika, oregano, salt & pepper

Cook 6–8 minutes until golden and cooked through

Finish with lemon juice & zest

2️⃣ Season Lentils

Warm lentils and toss with olive oil, lemon juice, cumin & salt

3️⃣ Make Drizzle

Whisk yogurt, tahini, lemon juice & salt

Add water until pourable

4️⃣ Assemble Bowl

Lentils → veggies → chicken

Drizzle sauce and add toppings
