Ingredients

Beans & Veggies

1 cup cooked black beans (or 1 can, drained & rinsed)

1 small onion, chopped

2 garlic cloves, minced

1 carrot, diced

1 red bell pepper, diced

1 small zucchini, diced

Liquids & Flavor

1 cup crushed tomatoes

1 tsp olive oil

1 tsp smoked paprika

½ tsp cumin

½ tsp chili powder

Salt & black pepper to taste

2 tbsp natural peanut butter (unsweetened, unsalted)

Juice of ½ lime

Optional Garnish

Fresh cilantro or parsley

Instructions

Saute Vegetables

Heat olive oil in a pot

Saute onion, garlic, carrot, bell pepper, and zucchini for 5 minutes until soft

Add Spices & Beans

Stir in smoked paprika, cumin, chili powder, salt, and pepper

Add black beans and crushed tomatoes

Simmer 15 minutes, stirring occasionally

Add Peanut Butter

Stir in peanut butter and lime juice

Simmer 2–3 more minutes until creamy and slightly thickened
