Roasted Sweet Potato

1 medium sweet potato (halved lengthwise)

1 tsp olive oil

Salt, to taste

Roasted Vegetables

1 cup broccoli florets

1 cup carrots, chopped

1 tbsp olive oil

Salt & black pepper, to taste

👩‍🍳 Instructions

1️⃣ Roast the Sweet Potato

1. Preheat oven to 200°C (400°F).

2. Rub sweet potato with olive oil and salt.

3. Place cut-side up on a baking tray.

4. Roast for 30–35 minutes until tender and lightly golden.

2️⃣ Roast the Vegetables

1. Toss broccoli and carrots with olive oil, salt, and pepper.

2. Spread on a tray and roast alongside sweet potato for 20–25 minutes, turning once.

3️⃣ Grill the Chicken

1. Rub chicken with olive oil, garlic powder, paprika, salt, and pepper.

2. Heat a grill pan over medium heat.

3. Grill chicken for 5–6 minutes per side until golden and cooked through.

4. Rest for 3 minutes before serving.
