Smoky Sweet Potato, Green Veggies & Chickpeas Sheet-Pan Dinner Bowl

Ingredients
Sheet-Pan Base
2 medium sweet potatoes, peeled & cubed
1½ cups cooked chickpeas (drained & dried)
1½ cups green vegetables (broccoli, green beans, or zucchini)
2½ tbsp olive oil
Smoky Seasoning
1 tsp smoked paprika
½ tsp garlic powder
¼ tsp ground cumin (optional)
Salt & black pepper, to taste
Optional Toppings
Greek yogurt or tahini sauce
Lemon wedges
Fresh parsley
👩🍳 Instructions
1️⃣ Preheat oven to 200°C (400°F).
2️⃣ Toss sweet potatoes with half the olive oil, half the spices, salt & pepper.
3️⃣ Spread on sheet pan and roast for 15 minutes.
4️⃣ Add chickpeas & green veggies, remaining oil and spices. Toss gently.
5️⃣ Roast another 15 minutes, until golden and crispy.
6️⃣ Serve warm in bowls with yogurt or tahini and lemon.
💡 Tips & Variations
Extra protein: Add grilled chicken or feta cheese.
Air fryer: Cook in batches at 190°C for 18–20 minutes.
Meal prep: Keeps fresh for 3–4 days in fridge.
No smoky paprika? Use regular paprika + a pinch of oregano.
Non-spicy: No chili used.
