Ingredients

Waffle Batter

1 cup milk

1 egg

2 tbsp olive oil

½ cup grated zucchini

¼ cup grated carrot

¼ cup finely chopped bell pepper

¼ cup chopped spinach

½ cup shredded cheese (cheddar, mozzarella, or mix)

Instructions

In a bowl, whisk flour, baking powder, salt, and pepper.
