Vegetables

1 cup cauliflower florets

1 cup broccoli florets

1 medium carrot, sliced

1 small zucchini, sliced

Yogurt–Mustard Sauce

1 cup thick plain yogurt (Greek-style works best)

1½ tbsp Dijon or mild mustard

1 tbsp olive oil

1 clove garlic, finely grated (optional)

½ tsp dried oregano or Italian herbs

Salt, to taste

Topping

¼ cup grated mozzarella or cheddar

2 tbsp grated parmesan

Instructions

1️⃣ Pre-cook the vegetables

Steam or boil cauliflower, broccoli, and carrots for 5–6 minutes until just tender.

Drain well and place in a lightly greased baking dish.

Add zucchini and onion, toss with olive oil, salt, and pepper.

2️⃣ Make the sauce

In a bowl, whisk yogurt, mustard, olive oil, garlic, herbs, and salt until smooth and creamy.

3️⃣ Assemble

Pour the yogurt–mustard sauce over the vegetables.

Gently mix to coat evenly.

Sprinkle cheese on top if using.

4️⃣ Bake

Bake at 190°C (375°F) for 25–30 minutes, until bubbling and lightly golden on top.
