2 medium zucchini (grated)
½ cup chickpea flour (besan)

2 garlic cloves (minced)
2 tbsp fresh parsley or coriander (chopped)
½ tsp salt (plus extra for draining zucchini)
½ tsp black pepper
½ tsp cumin powder (optional)
½ tsp chili flakes or green chili (optional)
2–3 tbsp water (if needed)
3–4 tbsp oil for pan frying
Instructions
Step 1: Prepare the zucchini
Grate zucchini and sprinkle with a little salt.
Let sit for 10 minutes to release moisture.
Squeeze out as much liquid as possible using a cloth or hands.
Removing water keeps fritters crispy.
Step 2: Make the batter
In a bowl, combine:

onion, garlic, herbs
chickpea flour and all-purpose/rice flour
