Air Fryer Chicken Quesadillas

Ingredients:
- Four large wheat tortillas
- Two cups of cheddar cheese, shredded
- Two cups of cooked, shredded chicken
- ¾ cup salsa;
- additional toppings such as guacamole, cilantro, sour cream, or peppers
Directions:

Preheat air fryer at 360F. Combine chicken and salsa in a medium size bowl. Microwave tortillas for 20 seconds to soften them.

Arrange ½ cup chicken mixture on half of one tortilla. Top with ½ cup shredded cheese. Fold over. Repeat with remaining tortillas, chicken and cheese..

Spray the air fryer basket and place quesadillas in the air fryer basket. Spray the tops with oil and cook for 8 minutes, flipping halfway.

Remove and let cool. Cut and top or serve with sour cream, salsa, or guacamole or your favorite toppings!
Notes:
If you don’t have an air fryer, making quesadillas in the oven is simple but takes a little more time. Start the oven at 425 degrees Fahrenheit. After preparing, place the tortillas on a baking pan. Bake for 8 minutes or so, then turn and continue baking for an additional 8 minutes or so, or until the cheese is melted and the tortillas are crispy.
Best advice
It’s okay to use only a portion of a packet of tortillas. Tortillas defrost in around 15 minutes and freeze quite nicely. For up to three months, wrap firmly and freeze until needed.
