Air Fryer Fish Taco Bowls

Ingredients:
- Cut 1 pound of fish fillets into 1-inch chunks.
- One tablespoon of olive oil
- 1/2 teaspoon of taco seasoning
- 1/4 cup Greek yoghurt with low fat
- Three tablespoons of mayonnaise
- One tablespoon of fresh lime juice and several lime wedges for garnish
- Half a teaspoon of the canned chipotle in adobo sauce
- One 12-oz sack of tricolour cole slaw mixture
- Two scallions, cut thinly
- Half a cup of cilantro leaves
- cooked brown rice.
Directions:
- Preheat the air fryer to 400°F. Mix the fish, oil, and 1 1/2 tablespoons of taco seasoning in a medium-sized bowl. Spread evenly in the air fryer basket and air fried for 6 to 7 minutes, or until brown and opaque throughout.
- Meanwhile, add yoghurt, mayonnaise, lime juice, adobo sauce, 1 tablespoon water, and the remaining 1/2 teaspoon taco spice in a mini food processor and pulse until well incorporated.
- Combine the coleslaw, cilantro, and scallions in a big bowl.
- Spoon rice into each bowl, add fish and slaw on top, and then pour chipotle sauce over the top. If preferred, serve with lime wedges.
