Air Fryer Stuffed Chicken Rolls Recipe

These stuffed chicken rolls are created with flattened chicken breasts and a spicy, cheesy, corn stuffing that gives this outstanding chicken supper a Mexican flair! They are crispy on the exterior and soft and cheesy on the inside! Simply air fry it to make a guilt-free chicken roll instead of frying it in oil.
Ingredients For Air Fryer Stuffed Chicken Rolls
- Four huge chicken breasts, pounded flat into large chunks after being cut 3/4 of the way through horizontally.
- sixteen pieces of mozzarella cheese
- One cup of drained maize
- One (8-oz package) cream cheese
- one tablespoon of finely chopped garlic
- One 4-ounce can of green chillis
- One cup of shredded Mexican cheese blend
- 1/4 cup finely chopped cilantro
- Half a teaspoon of salt
- One cup all-purpose flour
- half a teaspoon pepper
- Two well-beaten eggs
- Two cups of breadcrumbs (Panko breadcrumbs are recommended)
Instructions For Air Fryer Stuffed Chicken Rolls
- For five minutes, preheat the air fryer to 375°.
- Place one or two pieces of mozzarella cheese on top of a piece of flattened chicken.
- Combine the cream cheese, corn, green chilies, garlic and Mexican cheese in a sizable mixing basin. Using a hand mixer, beat until thoroughly blended. Over the cheese slices, spread a few spoonfuls of the cream cheese mixture.
- Roll up the chicken, beginning at one end, as tightly as you can without pushing out the filling.
- Close the chicken with toothpicks.
- Mix the flour, salt, and pepper in a big shallow plate.
- Transfer the beaten eggs to a another plate.
- Place the breadcrumbs in a third plate.
- Using the flour mixture, roll one chicken roll, then the eggs, and finally the bread crumbs.
- Make sure the rolls are not packed too tightly together when you place the breaded rolls in the air fryer. You might have to work on another batch.
- After giving the rolls a quick spray with nonstick cooking spray, replace the air fryer basket and programme it to cook at 375° for ten minutes.
- After turning the rolls over, mist them with nonstick cooking spray. Put the air fryer back in and continue cooking for 15 to 20 minutes.
- Check the doneness of the meat with a meat thermometer. When a thermometer is inserted into the centre of the roll, the temperature should read 165°.
- Take out and serve right away with your preferred side dish.
- Don’t forget to take the toothpicks out before serving.

Tips:
- Frequently, stores with meat counters may sell chicken breasts that have been cut into fillets. Alternatively, make a horizontal incision around the breast, being careful not to go all the way through. After that, cover them with a sheet of parchment paper and pound them until they are ¼ inch thick. This tastes well with any rice or mashed potato meal, or as a nutritious side dish with Mexican cauliflower rice. It tastes great with a side salad as well. You may also bake them for 25 minutes at 350° or fry them in oil if you’d rather.
- Storage: For up to five days, keep in the refrigerator in an airtight container.
