Air Fryer Sweet Potato-Topped Mini Meat Loaves

When paired with some crispy-tender green beans, these vibrant meat loaves make a memorable dinner for the whole family. Dinner may be on the table more quickly when you use an air fryer to expedite the cooking process.

Ingredients:

Sweet potatoes mashed

  1. One large sweet potato, peeled and cubed, weighing one pound (500 grammes).
  2. 45 mL (3 tbsp) butter
  3. 1/4 tsp (1 mL) of each seasoning
  4. 60 mL or ¼ cup of grated Parmesan cheese

Meat Loaves

  1. 500 g/1 pound of lean ground beef
  2. Grated parmesan cheese, ⅓ cup (75 mL)
  3. One green onion, cut finely
  4. 15 mL of one tablespoon prepared horseradish
  5. 1/4 tsp (1 mL) of each seasoning
  6. Cooking Spray
  7. One cup (250 mL) of cheddar cheese, shredded
  8. Two tsp (30 mL) freshly cut parsley

Instructions:

  1. Mashed Sweet Potatoes: Put the potatoes in a pot and fill it with cold water. Bring over high heat to a boil. Once soft, reduce heat and simmer for 20 minutes or so. After thorough draining, add butter, salt, and pepper to the saucepan. Using a potato masher, mash until smooth; add Parmesan cheese and stir.
  2. Meat Loaves: In the meantime, use a fork to gently mix together the meat, Parmesan cheese, green onion, horseradish, salt, and pepper in a sizable basin, being careful not to overmix.
  3. Separate the beef mixture into four equal parts, then form each into an oval shape that is approximately 4 inches (10 cm) long and 1 inch (2.5 cm) thick. Place in the air fryer basket, separating them slightly. Evenly distribute the mashed potato mixture over the tops of the loaves.
  4. Preheat the oven to 375°F (190°C), and give it 15 minutes. A digital instant-read thermometer placed in the centre of each loaf should read 160oF (71ºC) when cooked.
    In a small bowl, mix parsley and cheddar cheese. Sprinkle liberally on top of the meat loaf. Enter the air fryer basket again. Allocate two minutes for this task. Cook the cheese until it melts.

Per Serving (1 meatloaf or 1/4 recipe): 580 calories, 34g fat, 19g saturated fat, 120mg cholesterol, 870mg sodium, 31g carbs, 4g fibre, 10g sugars, 36g protein, vitamin A 165%, vitamin C 28%, vitamin D ≥1%, calcium 45%, iron 20%.
