Ingredients
For the Chicken:
2 boneless, skinless chicken breasts, cut into strips
1 tbsp olive oil
1 tsp garlic powder
½ tsp paprika
½ tsp dried oregano
Salt and pepper, to taste
Juice of ½ lime
For the Crispy Beef Bits:
100g (3–4 oz) lean ground beef
½ tsp olive oil
Pinch of garlic powder and black pepper
Dash of soy sauce or Worcestershire sauce
For the Bowl Base:
1 cup cooked brown rice, quinoa, or couscous
½ cup corn kernels
½ cup black beans, drained and rinsed
½ cup cherry tomatoes, halved
¼ cup sliced red onion or bell peppers
Fresh romaine or spinach, chopped
For the Avocado Ranch Dressing:
½ medium avocado
¼ cup Greek yogurt
1 tbsp olive oil
1 tsp lime juice
½ tsp garlic powder
½ tsp dried dill or parsley
Salt and pepper, to taste
2 tbsp water or milk, to thin
Instructions
1. Cook the Chicken
Heat olive oil in a skillet over medium heat.
Add chicken, garlic powder, paprika, oregano, salt, and pepper.
Cook for 6–8 minutes, turning occasionally, until golden and cooked through.
Squeeze lime juice over the top and set aside.
2. Make the Crispy Beef Bits
In the same pan (or a separate one), add a little olive oil and ground beef.
Cook over medium-high heat until browned and crispy (about 5–7 minutes).
Add a pinch of garlic powder, black pepper, and a splash of soy sauce for depth.
Cook until crispy and crumbly. Remove and set aside.
3. Blend the Avocado Ranch Dressing
In a blender or small food processor, combine avocado, Greek yogurt, olive oil, lime juice, garlic powder, dill, salt, and pepper.
Blend until smooth, adding water or milk to reach drizzling consistency.
Taste and adjust lime or salt as needed.
4. Assemble the Bowl
In serving bowls, layer your rice or quinoa base.
Add chicken, beans, corn, tomatoes, onions, and greens.
Drizzle with avocado ranch dressing.
Top with crispy beef bits for crunch and rich flavor.
5. Garnish & Serve
