Ingredients

For the Fry:

1 ½ cups baby corn (sliced lengthwise)

1 tablespoon cornflour (cornstarch)

1 tablespoon all-purpose flour (optional, for extra crispiness)

½ teaspoon salt

½ teaspoon black pepper powder

¼ teaspoon turmeric powder

½ teaspoon red chili powder

2 tablespoons water (adjust as needed)

2 tablespoons  olive oil

For the Stir-Fry:

1 tablespoon olive oil

1 teaspoon mustard seeds

1 teaspoon cumin seeds

1 small onion, sliced

2 cloves garlic, minced

1 green chili, chopped (optional)

½ teaspoon crushed black pepper

½ teaspoon gram masala (optional, for extra depth)

1 teaspoon soy sauce (optional, for a fusion twist)

1 tablespoon chopped curry leaves or cilantro (for garnish)

Instructions

1. Prepare and Fry the Baby Corn:

1. In a mixing bowl, combine baby corn with cornflour, all-purpose flour (if using), salt, black pepper, turmeric, red chili powder, and water. Toss until well coated.

2. Heat 2 tablespoons of  olive oil in a pan over medium heat.

3. Add the coated baby corn and fry for 5–6 minutes, stirring occasionally, until lightly crispy and golden. Remove and set aside.

2. Prepare the Stir-Fry:

1. In the same pan, add 1 tablespoon of olive oil.

2. Add mustard seeds and cumin seeds; let them splutter.

3. Add sliced onions and saute for 2 minutes until slightly golden.

4. Stir in minced garlic and green chili; saute for 30 seconds.

5. Add crushed black pepper and gram masala, mixing well.

6. Add the fried baby corn and toss everything together for 2 minutes.

7. (Optional) Add soy sauce for an umami kick. Stir well.

3. Serve & Garnish:

Garnish with fresh curry leaves or chopped cilantro.

Serve hot as a snack, appetizer, or side dish with rice or roti.

Storage & Reheating:

Best enjoyed fresh, but can be stored in an airtight container for 1 day.
