Chicken

4 large boneless, skinless chicken breasts

8–12 slices bacon (depending on size)

1 tbsp olive oil

1 tsp garlic powder

1/2 tsp black pepper

1/2 tsp salt

Spinach & Cheese Filling

2 cups fresh spinach (chopped)

4 oz (115 g) cream cheese (softened)

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

2 cloves garlic (minced)

Salt & pepper to taste

Instructions

1. Prepare filling

Heat a pan over medium heat.

Add garlic and sauté for 30 seconds.

Add spinach and cook until wilted.

Remove from heat and mix with cream cheese, mozzarella, and Parmesan. Set aside.

2. Prepare chicken

Slice each chicken breast horizontally to create a pocket (don’t cut all the way through).

Season with salt, pepper, paprika, and garlic powder.

3. Stuff chicken

Fill each chicken breast with spinach-cheese mixture.

Secure with toothpicks if needed.

4. Wrap with bacon

Wrap 2–3 slices of bacon around each stuffed chicken breast, slightly overlapping.

5. Bake

Preheat oven to 200°C (400°F).

Place chicken in a baking dish or on a lined tray.

Bake for 30–35 minutes until bacon is crispy and chicken is fully cooked (internal temp: 75°C / 165°F).
