Ingredients 

  1. 4 boneless, skinless chicken breasts
  2. 1 tbsp olive oil
  3. 1 tsp chili powder
  4. 1 tsp paprika
  5. 1/2 tsp cumin
  6. Salt and pepper, to taste
  7. 1 red bell pepper, sliced
  8. 1 green bell pepper, sliced
  9. 1 yellow bell pepper, sliced
  10. 1 small onion, sliced
  11. 1 cup shredded Mexican blend cheese
  12. Fresh cilantro, chopped (for garnish)

Directions

Preheat Oven

Preheat your oven to 400°F (200°C).
Season the Chicken

In a bowl, mix olive oil, chili powder, paprika, cumin, salt, and pepper. Rub this mixture evenly over the chicken breasts.
Prepare Veggies

Place the sliced bell peppers and onion in a baking dish. Place the seasoned chicken breasts on top of the veggies.
Bake:

Cover the baking dish with foil and bake for 20 minutes.
Add Cheese

Remove the foil, sprinkle shredded cheese evenly over the chicken, and return to the oven. Bake uncovered for an additional 10-15 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
Garnish and Serve

Garnish with fresh cilantro and serve hot. Enjoy with rice, tortillas, or a side salad!
