Baked Chicken Burrito Recipe

Ingredients:

For the filling:

2 cups cooked chicken (shredded or chopped)

1 cup cooked rice (white or Mexican)

1 cup canned black beans (drained and rinsed)

1 cup shredded cheese (cheddar, Monterey Jack, or a mix)

1/2 cup salsa or enchilada sauce

1/2 cup sour cream or Greek yogurt (optional for creaminess)

1 tsp cumin

1/2 tsp paprika

Salt & pepper to taste

To assemble:

4–6 large flour tortillas

1/2 cup shredded cheese (for topping)

Extra salsa or enchilada sauce (for topping)

Instructions:

Preheat oven to 400°F (200°C).

Mix the filling: In a large bowl, combine cooked chicken, rice, beans, cheese, salsa, sour cream, and spices. Stir until well mixed.

Assemble burritos:

Warm the tortillas slightly to make them pliable.

Spoon the filling into each tortilla and roll tightly like a burrito.

Bake:

Place burritos seam-side down in a baking dish.

Spoon extra salsa or enchilada sauce over the top and sprinkle with shredded cheese.

Cover loosely with foil and bake for 15–20 minutes, then uncover and bake an additional 5–10 minutes until the cheese is bubbly and golden.

Serve hot, topped with sour cream, guacamole, or chopped cilantro if desired.
