Baked Spaghetti Casserole (2 Servings)
Ingredients:
- 4 oz hearts of palm or zucchini noodles
- 1/2 lb (8 oz) 99% lean ground turkey
- 1/2 jar (12 oz) sugar-free marinara sauce (like Rao’s or homemade)
- 1/2 cup fat-free shredded mozzarella cheese
- 1/4 cup fat-free ricotta cheese
- 2 tbsp grated Parmesan cheese
- 1 large egg (using half)
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
- In order to prepare the noodles made from hearts of palm or zucchini, you can either briefly fry them or use them raw for a more substantial consistency.
- Before beginning to prepare the noodles, brown the ground turkey over a heat setting of medium. Using garlic powder, onion powder, Italian seasoning, salt, and pepper, season the dish using the ingredients.
After the turkey has been cooked, pour the marinara sauce over it and let it simmer for five to ten minutes. - Put the fat-free ricotta cheese, the Parmesan cheese, and half of the beaten egg into a small bowl and mix them together until they are completely blended.
- First, layer the noodles, then the meat sauce, and finally the ricotta mixture in a small casserole dish or a pan that can go in the oven.
It is topped with shredded mozzarella cheese that is fat-free. - The cheese should be melted and bubbling after about 20 to 25 minutes of baking at 375 degrees Fahrenheit.
- If you so wish, garnish with fresh parsley, and serve while still hot.
