I saw this online earlier today and decided to try it. It works like a charm! I’m making potato salad and needed 8 boiled eggs, chopped. Did you know you can just crack them in a bowl and put the whole bowl in a pot of water? No ice bath or peeling is required!
INGREDIENTS:
- 10 eggs
- 1 cup water
- Egg Salad:
- 1/3 cup mayonnaise
- 2 ribs celery, finely diced
- 2 tablespoons Dijon mustard
- 1-2 teaspoons lemon juice, or to taste
- 1 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/4 teaspoon paprika
- freshly ground pepper, to taste
- fresh chives or green onion, finely chopped, garn
METHOD:
- A medium-sized bowl that is heat-resistant should be lightly sprayed with non-stick spray. Ensure that the bowl can be placed inside the Instant Pot. Prepare the Instant Pot by placing a steam rack or trivet inside.
- Next, set the bowl on the steam rack after cracking the eggs into the oiled basin.
- One cup of water should be poured into the Instant Pot, not into the bowl containing the eggs. The lid should then be closed, and the pressure release valve should also be shut.
- Cook for five minutes under either manual or high pressure, then let the pressure to naturally release for another five minutes before removing the remaining pressure.
- The bowl should be removed from the pressure cooker with caution, and the hard-boiled eggs should be placed on a cutting surface. After being cut into pieces, put them to a big bowl and, if you are using chopped celery, add that, as well.
- Mayonnaise, mustard, lemon juice, salt, garlic powder, and paprika should be mixed together in a medium bowl using a whisk. Additionally, fresh pepper should be added to the mixture.
- Pour the mixture over the chopped egg and toss it together after it has been incorporated. Fresh chives or green onions may be sprinkled on top.
