Best Filipino Pancit

Ingredients:

– 1 cup rice noodles (bihon)
– 1/2 cup Olive oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 cup mixed vegetables (cabbage, carrots, green beans)
– 1 cup cooked beef or chicken, shredded
– 2 tablespoons patis (fish sauce)
– 2 tablespoons soy sauce
– 1 tablespoon oyster sauce (optional)
– Salt and pepper to taste
– 2 eggs, beaten (for egg strands)
– Chopped green onions and calamansi (Filipino lime) for garnish

Instructions:

1. Follow the directions on the box to cook the rice noodles. After draining, put away.
2. Heat oil in a big skillet or wok. Add the garlic and onion and sauté until they are tender.
3. Include cooked meat and a variety of veggies. Stir-fry for two to three minutes.
4. Include the oyster sauce (if using), soy sauce, and patis. Give it a minute of stirring.
5. Stir-fry the cooked noodles for two to three minutes.
6. Set aside the noodles, add the eggs, and scramble them.
7. Combine noodles and eggs.
8. To taste, add salt and pepper.
9. Add calamansi and green onions as garnish.

Tips and Variations:

– Use chicken, or shrimp for protein.
– Add squid or vegetables like bell peppers or mushrooms.
– Substitute rice noodles with egg noodles or canton noodles.
– Serve with sliced calamansi and patis on the side.
