Cajun Chicken with Coriander Lime Rice

Ingredients:
For the Cajun Chicken:
2 boneless, skinless chicken breasts or thighs
1 tbsp olive oil
1 tbsp Cajun seasoning
1 tsp paprika
Salt & pepper to taste

1 cup basmati or jasmine rice
1¾ cups water or broth
1 tbsp olive oil
1 clove garlic, minced
2 tbsp fresh lime juice
2 tbsp fresh coriander/cilantro, chopped

Avocado slices or Greek yogurt for a creamy side

Homemade Cajun Seasoning:
Mix together:
1 tsp paprika
½ tsp garlic powder
½ tsp onion powder
½ tsp oregano
½ tsp thyme
¼ tsp cayenne

Instructions:
1. Season & Cook the Chicken:
Rub chicken with olive oil and Cajun seasoning.
Pan-sear: Heat a skillet over medium heat. Cook 5–6 min per side until golden and cooked through.
Or bake: 200°C (400°F) for 25 minutes. Rest and slice.
2. Cook the Rice:
Rinse rice well and drain.
In a saucepan, add rice, water, salt, and olive oil. (Add garlic if using.)
Bring to a boil, then reduce to low, cover, and simmer 12–15 minutes.
Remove from heat, fluff with a fork, and mix in lime juice and chopped coriander.
3. Assemble:
Divide rice into bowls or plates.
Top with sliced Cajun chicken.
Garnish with extra coriander, lime, or avocado if desired.

Want more heat? Add chili flakes or more cayenne to the seasoning.
