Cheesy Veggie Sticks (Pan-Fried)
Ingredients
- 1 zucchini, grated
- 1 carrot, grated
- 2 medium potatoes, grated
- 2 eggs
- 2–3 green onions (chopped)
- 1 cup shredded cheese (mozzarella or cheddar)
- ½ cup flour (or breadcrumbs)
- 2 cloves garlic (minced)
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika (optional)
- Oil for frying
Instructions
1. Prep the veggies (IMPORTANT)
- Grate zucchini, carrot, and potatoes
- Place in a clean cloth and squeeze out ALL excess water
👉 This step makes them crispy instead of soggy
2. Mix everything
In a large bowl, combine:
- Grated veggies
- Eggs
- Cheese
- Green onions
- Garlic
- Flour/breadcrumbs
- Salt, pepper, paprika
Mix until it forms a thick, moldable mixture
3. Shape the sticks
- Take portions and shape into logs/sticks
- Press firmly so they hold together
4. Pan-fry
- Heat oil in a pan over medium heat
- Add sticks in a single layer
- Cook for 3–4 minutes per side
- Turn until golden brown and crispy all around
5. Serve
- Remove and drain on paper towels
- Serve hot with:
- Garlic yogurt dip
- Ranch
- Chili sauce
Quick Garlic Dip (optional)
- ½ cup yogurt
- 1 clove garlic (minced)
- Pinch salt + lemon juice
Mix and serve 👍
Tips
- The drier the mixture → the crispier the sticks
- Don’t overcrowd the pan
- Use medium heat so inside cooks well
- Add chili flakes for spice 🌶️
Optional Cooking Methods
- Oven: 200°C (400°F) for 25–30 mins
- Air fryer: 180°C (350°F) for 12–15 mins
