The name “Cacciatore” literally means “hunter” in Italian, and this recipe is said to have been inspired by the hearty meals that hunters would prepare for themselves after a long day in the field.

Ingredients:

4 bone-in, skin-on chicken thighs (or a mix of thighs

and drumsticks)

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 medium bell pepper, sliced (any color)

1 cup mushrooms, sliced

1 can (14.5 oz) diced tomatoes, with juices

½ cup chicken broth (or dry white wine for extra flavor)

2 tablespoons tomato paste

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon dried thyme

1 bay leaf

Salt and pepper, to taste

¼ cup pitted Kalamata olives (optional)

2 tablespoons capers (optional)

Fresh parsley or basil, chopped (for garnish)

Instructions:
1.Prepare the Chicken:

Season the chicken with salt and pepper.
Heat olive oil in a large skillet or Dutch oven over medium-high heat.
Add the chicken, skin-side down, and sear until golden brown (about 5 minutes per side). Remove and set aside.

2.Cook Vegetables:

In the same skillet, reduce heat to medium. Add the onion, garlic, bell pepper, and mushrooms.
Cook until softened, about 5-7 minutes.

3.Build the Sauce:

Stir in the tomato paste and cook for 1 minute.
Add the diced tomatoes, chicken broth (or wine), oregano, basil, thyme, and bay leaf. Mix well.

4.Simmer:

Return the chicken to the skillet, nestling it into the sauce.
Reduce heat to low, cover, and simmer for 30-40 minutes, or until the chicken is cooked through and tender.

5.Optional Additions:

In the last 10 minutes, stir in the olives and capers for a briny kick.

6.Serve:

Garnish with fresh parsley or basil. Serve hot over pasta, rice, or with crusty bread to soak up the sauce.
