Ingredients

Crispy Rice

2 cups cooked rice

2 tbsp olive oil

½ tsp garlic powder

¼ tsp black pepper

Pinch of salt

Chicken

2 boneless skinless chicken breasts

1 tbsp olive oil

½ tsp paprika

½ tsp garlic powder

Salt & black pepper

Salad

1 large romaine lettuce, chopped

¼ cup shaved Parmesan cheese

Optional: cherry tomatoes or roasted chickpeas

Light Caesar Dressing

¼ cup Greek yogurt

1 tbsp olive oil

1 tbsp lemon juice

1 tsp Dijon mustard

1 garlic clove, grated

1 tbsp grated Parmesan

Salt & black pepper

Instructions

1. Make crispy rice

Preheat oven to 425°F (220°C).

Toss rice with olive oil, garlic powder, salt, and pepper.

Spread thinly on a baking tray.

Bake 20–25 minutes, stirring halfway, until golden and crispy.

2. Cook chicken

Season chicken with olive oil, paprika, garlic powder, salt, and pepper.

Grill, pan-sear, or bake until cooked through.

Rest 5 minutes, then slice.

3. Prepare dressing

Whisk all dressing ingredients until smooth and creamy.

4. Assemble salad

In a large bowl, combine romaine, crispy rice, and chicken.

Drizzle with dressing and toss gently.

Top with shaved Parmesan and optional add-ins.
