Chicken Sausage with Zucchini, Tomatoes & Pasta
Juicy chicken sausage is pan-seared and tossed with tender zucchini, sweet tomatoes, olive oil, and pasta. Light, savory, and very Mediterranean—no heat, just clean flavors.

Ingredients
250 g pasta (penne, fusilli, or rigatoni)
2 tbsp olive oil
3 chicken sausages, sliced (Italian-style or herb chicken sausage)
2 medium zucchini, sliced into half-moons
1½ cups cherry tomatoes, halved
2 garlic cloves, finely chopped
½ tsp salt (or to taste)
¼ tsp black pepper
½ tsp dried oregano or Italian seasoning
¼ cup pasta cooking water (as needed)
¼ cup grated parmesan cheese (optional)
Fresh basil or parsley, chopped (for garnish)
Instructions
1. Cook the pasta
Boil pasta in well-salted water until al dente. Reserve ¼ cup pasta water, then drain.
2. Cook the sausage
Heat 1 tbsp olive oil in a large pan over medium heat.
Add sliced chicken sausage and cook until lightly golden. Remove and set aside.
3. Sauté the vegetables
Add remaining olive oil to the same pan.
Add zucchini and cook 3–4 minutes until just tender.
Stir in garlic and cook 30 seconds.
4. Add tomatoes
Add cherry tomatoes, salt, pepper, and oregano.
Cook 2–3 minutes until tomatoes soften and release juices.
5. Combine
Return sausage to the pan.
Add pasta and a splash of pasta water. Toss gently until everything is coated and glossy.
6. Finish
Taste and adjust seasoning.
Top with parmesan and fresh herbs before serving.
Tips
Don’t overcook zucchini—it should stay slightly firm.
Pasta water helps create a light sauce without cream.
Use herb or garlic chicken sausage for best flavor.
