Ingredients

For the Stir Fry:

1 can (15 oz / 400g) chickpeas

2 cups broccoli florets

1 red bell pepper

1 carrot

2 tbsp olive oil

2 green onions

Sesame seeds

For the Garlic Sauce:

3 tbsp soy sauce (or tamari for gluten-free)

2 tbsp rice vinegar

1 tbsp maple syrup

1 tbsp cornstarch (mixed with 3 tbsp water – slurry)

3 garlic cloves

1 tsp fresh ginger

½ cup vegetable broth (or water)

½ tsp chili flakes

Instructions

Prepare the sauce

In a small bowl, whisk together soy sauce, rice vinegar, maple syrup, garlic, ginger, broth, and chili flakes.

Stir in the cornstarch slurry until smooth. Set aside.

Cook the vegetables

Heat 1 tbsp oil in a large skillet or wok over medium-high heat.

Add broccoli, bell pepper, and carrot. Stir fry 4–5 minutes until just tender but still crisp. Remove from pan and set aside.

Cook the chickpeas

In the same skillet, add another 1 tbsp oil.

Add chickpeas and stir fry for 3–4 minutes until lightly golden.

Combine & sauce it up

Return the veggies to the pan with chickpeas.

Pour in the garlic sauce, stirring well.

Cook 2–3 minutes until sauce thickens and coats everything.

Serve

Transfer to bowls.

Garnish with sesame seeds and green onions.

Serve with steamed rice or noodles.

For extra flavor, roast chickpeas in the oven until crispy before stir frying.
